The bouquet of DANIEL BOUJU cognacs

As soon as they are distilled, the new eaux-de-vie are left to age in our own clay cellars, humid for some and dry for others, thus benefiting from conditions allowing the eaux-de-vie to age harmoniously. This long process of maturation takes place in oak barrels with a capacity varying from 350 to 400 liters mainly. Only part of our production will be aged in new oak barrels, the other part in older barrels. Aged in this way, the oak barrels will give DANIEL BOUJU Cognacs that rich, deep and warm color, that sweet flavor and that captivating fragrance that make COGNAC DANIEL BOUJU a unique cognac, so different, and with so much personality. They will also acquire, over the years, this mellowness so appreciated, Signature of DANIEL BOUJU Cognacs.

The Daniel BOUJU Brand…

… the result of a working method above all.

The white grapes from the Ugni-blanc grape variety are harvested by us. This late-ripening variety used for its resistance to disease gives a wine with a high acidity rate and a low alcoholic content due to its low sugar content, two ideal characteristics to ensure the quality of Cognac eaux-de-vie.

The pressing of the bunches is carried out immediately after harvest in our own wine cellar. It is only after natural fermentation of the grape juice that we will obtain this white wine of low degree with a strong acidity. This wine, to which we pay all our attention since its harvest, will be distilled in our own Charentais still of traditional shape and with a capacity of 16.5 hectolitres. The unfiltered wines that we distill with their lees come exclusively from our vineyard.

Highlight of our artisanal work, the distillation will be carried out by us. Our Charentais still of 16.5 hectoliters allows us to find in the brandy only the volatile substances which are the very essence of what you will find in the bouquet of our cognacs. Constant monitoring during this operation is essential. It is at this time, respecting the family method and this ancestral know-how, that we give our Cognac the elements that make its personality. This unique fragrance of great delicacy, this bouquet of great finesse and this richness of taste, the signature of our cognac.

Then comes the aging of the cognac in oak barrels. It is the wood that will give its bouquet as well as its final color to the cognac. It is these natural characteristics that are transmitted to the eau-de-vie: the color ranges from golden yellow to fiery brown.

During the long years when the cognac is in its barrel, it will evolve in contact with the oak wood and the air… It gradually loses its alcoholic strength… and its volume through evaporation! This is the ‘angels’ share’. This evaporation represents the equivalent of thousands of bottles each year, and feeds a microscopic fungus, the TORULA COMPNIACENSIS, which blackens the walls and roofs of buildings in the Cognac region.

Daniel BOUJU Cognacs market their products in France to professional wine merchants only. You will not find them in supermarkets.

Internationally, Cognacs and Pineau des Charentes Daniel BOUJU are imported and redistributed to the best wine merchants and restaurants in Europe, the United States, Canada, Asia (Japan, Hong Kong), Russia and even Israel.

Daniel BOUJU assists the importer in a long-term partnership relationship in order to help him both in terms of brand marketing and communication (definition and description of products, selection of visuals, tasting campaigns, etc.). If deemed necessary by the importer, Daniel BOUJU intervenes in the education and training of managers and sales representatives to acquire a real culture of cognac, the product and the brand.

Being close to its importing and distributing partners is essential for Daniel BOUJU Cognacs.
