It is now that the long aging process begins which will allow the Eaux de vie nouvelles to reach maturity.

As soon as they are distilled, the new eaux-de-vie are left to age in our own cellars on clay, humid for some and dry for others, thus benefiting from conditions allowing the eaux-de-vie to age harmoniously. This long process of maturation takes place in oak barrels with a capacity varying from 350 to 400 liters mainly. Only part of our production will be aged in new oak barrels, the other part in older barrels. Aged in this way, the oak barrels will give DANIEL BOUJU Cognacs that rich, deep and warm color, that sweet flavor and that captivating fragrance that make COGNAC DANIEL BOUJU a unique cognac, so different and with so much personality. They will also acquire, over the years, this mellowness so appreciated, Signature of DANIEL BOUJU Cognacs.

Blends & ages of Cognac

Selecting cognacs for their intrinsic qualities and Assembling them by combining the character of each to sublimate the typicality of the blend, such is the Art of the cellar master. This Art is at the very heart of our business.

To be offered for consumption, a minimum aging of 2 years in oak casks in the production area is required. The counting and control of ages are carried out by the Bureau National Interprofessionnel du Cognac (BNIC).

Only housed in wood, the benefits of aging cognac can operate. Once bottled, it will forever retain the age it had when it was bottled.

According to the regulations in force, the minimum age of Cognacs must correspond to:
o ***, Sélection, De Luxe, VS. : 30 months minimum,
o VSOP, Réserve: 4 ½ years minimum,
o Napoléon, Vieille Réserve, Excellence: 6 ½ years minimum
, o XO, Extra, Hors d’âge: 10 years minimum

Each mention of aging corresponds to the age of the youngest eau-de-vie that enters the blend.

Vintages
These are Cognacs whose eaux-de-vie come from a single year. (It is then the year of the harvest which is indicated on the label). This is an uncommon practice for Cognac. Vintage eaux-de-vie age in sealed barrels or in vintage cellars. Age and aging are controlled and certified by the BNIC.

Since 1990, Daniel BOUJU Cognacs have reserved part of their production each year for vintage Cognacs.
